Chipotle Style Guacamole
Ingredients:
3 ripe avocados
1/4 cup fresh cilantro, finely chopped
1 small red onion, finely diced
1 jalapeño pepper, finely chopped (seeds removed for less heat)
1 lime, juiced (about 2 tablespoons)
1/2 lemon, juiced (about 1 tablespoon)
1/2 teaspoon sea salt (adjust to taste)
Instructions:
Prepare the Avocados:
Cut the avocados in half, remove the pits, and scoop the flesh into a large bowl.
Use a fork or potato masher to mash the avocados to your desired consistency (chunky or smooth).
Sprinkle the mashed avocados with 1/2 teaspoon of sea salt, mixing it gently to ensure the salt is evenly distributed.
Prepare the Mix-Ins:
In a separate bowl, combine the chopped cilantro, diced red onion, and finely chopped jalapeño.
Squeeze in the juice from one lime and half a lemon, mixing the ingredients well.
Combine and Mix:
Gently fold the prepared mix-ins into the bowl with the mashed avocados. Stir just enough to combine all the flavors without over-mixing.
Adjust and Serve:
Taste the guacamole and adjust salt or citrus juice as needed.
Serve immediately with tortilla chips, or use it as a topping for your favorite dishes like tacos, burritos, or salads.
