Chipotle Style Guacamole

Ingredients:

  • 3 ripe avocados

  • 1/4 cup fresh cilantro, finely chopped

  • 1 small red onion, finely diced

  • 1 jalapeño pepper, finely chopped (seeds removed for less heat)

  • 1 lime, juiced (about 2 tablespoons)

  • 1/2 lemon, juiced (about 1 tablespoon)

  • 1/2 teaspoon sea salt (adjust to taste)

Instructions:

  1. Prepare the Avocados:

    • Cut the avocados in half, remove the pits, and scoop the flesh into a large bowl.

    • Use a fork or potato masher to mash the avocados to your desired consistency (chunky or smooth).

    • Sprinkle the mashed avocados with 1/2 teaspoon of sea salt, mixing it gently to ensure the salt is evenly distributed.

  2. Prepare the Mix-Ins:

    • In a separate bowl, combine the chopped cilantro, diced red onion, and finely chopped jalapeño.

    • Squeeze in the juice from one lime and half a lemon, mixing the ingredients well.

  3. Combine and Mix:

    • Gently fold the prepared mix-ins into the bowl with the mashed avocados. Stir just enough to combine all the flavors without over-mixing.

  4. Adjust and Serve:

    • Taste the guacamole and adjust salt or citrus juice as needed.

    • Serve immediately with tortilla chips, or use it as a topping for your favorite dishes like tacos, burritos, or salads.
