Homemade Carbonara Recipe

Ingredients:

  • 4 large eggs

  • Parmesan cheese

  • Freshly ground black pepper

  • Diced pancetta

  • Salt

  • Garlic

  • Fresh Parsley

  • Pasta of your choice

Instructions:

  1. Prepare the Sauce: In a bowl, whisk together the 4 eggs, Parmesan cheese, and a generous amount of freshly ground black pepper until well combined. This will be your carbonara sauce.

  2. Cook Pancetta and Garlic: Dice the pancetta and cook it in a pan over low heat until crispy. In the last minute of cooking, add the minced garlic and cook until fragrant. Once cooked, wipe the grease from the pan.

  3. Boil Pasta: Bring a large pot of water to a boil. Add a generous amount of salt to flavor the pasta. Cook the pasta according to the package instructions until al dente.

  4. Prepare Sauce: Before draining the pasta, add a spoonful of pasta water to the sauce bowl and mix well.

  5. Combine Ingredients: Drain the pasta and add more grated Parmesan cheese to the bowl.

  6. Mix Pancetta and Herbs: Add the cooked pasta to the pancetta and garlic pan.

  7. Finish Dish: Stir everything together, making sure to combine well but not overcook the eggs. The heat from the pasta will cook the eggs just enough to create a creamy sauce.

  8. Serve: Serve immediately, garnished with additional grated Parmesan cheese, a sprinkle of freshly ground black pepper, and a touch of fresh parsley for color.
