Peppermint Bark Cheesecake Parfaits Recipe
Ingredients:
1 cup crushed chocolate cookies (e.g., Oreos)
2 tablespoons melted butter
8 oz cream cheese, softened
1 cup heavy whipping cream
1/3 cup powdered sugar
1/2 teaspoon peppermint extract
1/2 cup crushed peppermint candies
Whipped cream for topping
Chocolate shavings or extra peppermint candies for garnish
Instructions:
Make the Crust Layer: Mix crushed cookies and melted butter in a bowl. Divide evenly into serving glasses or jars.
Prepare the Cheesecake Filling: Beat cream cheese until smooth. In a separate bowl, whip heavy cream and powdered sugar until stiff peaks form. Gently fold whipped cream into the cream cheese, adding peppermint extract and crushed peppermint candies.
Assemble the Parfaits: Layer the cheesecake mixture over the cookie crust in the glasses. Repeat layers if desired.
Chill: Refrigerate for at least 2 hours.
Serve: Top with whipped cream, chocolate shavings, and extra peppermint candies.
