Puerto Rican Rice Recipe!

Puerto Rican Rice

Ingredients:

  • 2 cups washed white rice

  • 2 tablespoons olive oil

  • 4 cloves garlic, minced

  • 1 tablespoon sofrito

  • 1 tablespoon tomato paste

  • 1 tablespoon Morton salt

  • 1/2 teaspoon black pepper

  • 1/4 cup Goya Adobo seasoning

  • 1 teaspoon dried oregano

  • 1 cube of Maggi chicken flavor bouillon

  • 4 cups water

  • 1 can (15 oz) beans (kidney, pinto, or black), drained and rinsed

  • 1/4 cup fresh cilantro, chopped (plus extra for garnish)

Instructions:

  1. Prepare Aromatics: In a large pot or deep skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add the sofrito and tomato paste, and cook for another 3-4 minutes, stirring occasionally.

  2. Add Seasonings: Stir in Morton salt, black pepper, Goya Adobo, dried oregano, and Maggi chicken flavor bouillon. Mix well to combine.

  3. Incorporate Beans: Add the drained beans and pour in the water and bring to a boil, and continue stirring to combine with the seasonings. Add your fresh cilantro to the pot and cook for an additional 2-3 minutes.

  4. Cook the Rice: Add the washed white rice to the pot, stirring to coat the rice with the seasoning mixture.Reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.

  5. Finish and Serve: Fluff the rice with a fork and garnish with extra fresh cilantro before serving.
