Puerto Rican Rice Recipe!
Puerto Rican Rice
Ingredients:
2 cups washed white rice
2 tablespoons olive oil
4 cloves garlic, minced
1 tablespoon sofrito
1 tablespoon tomato paste
1 tablespoon Morton salt
1/2 teaspoon black pepper
1/4 cup Goya Adobo seasoning
1 teaspoon dried oregano
1 cube of Maggi chicken flavor bouillon
4 cups water
1 can (15 oz) beans (kidney, pinto, or black), drained and rinsed
1/4 cup fresh cilantro, chopped (plus extra for garnish)
Instructions:
Prepare Aromatics: In a large pot or deep skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add the sofrito and tomato paste, and cook for another 3-4 minutes, stirring occasionally.
Add Seasonings: Stir in Morton salt, black pepper, Goya Adobo, dried oregano, and Maggi chicken flavor bouillon. Mix well to combine.
Incorporate Beans: Add the drained beans and pour in the water and bring to a boil, and continue stirring to combine with the seasonings. Add your fresh cilantro to the pot and cook for an additional 2-3 minutes.
Cook the Rice: Add the washed white rice to the pot, stirring to coat the rice with the seasoning mixture.Reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
Finish and Serve: Fluff the rice with a fork and garnish with extra fresh cilantro before serving.
