Sticky Mango Chili Chicken Skewers Recipe🍗🥭🔥
Ingredients:
For the Marinade:
2 large ripe mangoes, peeled and pureed
3 tbsp soy sauce
2 tbsp honey
1 tbsp rice vinegar
2 cloves garlic, minced
1 tsp fresh ginger, grated
1–2 tsp chili flakes (adjust to heat preference)
Juice of 1 lime
Salt to taste
For the Chicken:
1.5 lbs boneless chicken thighs, cut into chunks
Wooden skewers (soaked in water for 30 minutes)
For Garnish:
Chopped cilantro
Lime wedges
Extra chili flakes or sliced red chili (optional)
Instructions:
In a bowl, combine mango puree, soy sauce, honey, rice vinegar, garlic, ginger, chili flakes, lime juice, and a pinch of salt. Mix well.
Add chicken chunks to the marinade. Cover and refrigerate for at least 2 hours (overnight is best).
Thread marinated chicken onto soaked skewers. Reserve leftover marinade.
Preheat grill or grill pan over medium-high heat.
Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked and slightly charred.
While grilling, simmer the leftover marinade in a small saucepan for 5–7 minutes until thickened.
Brush thickened sauce over skewers during the last 2 minutes of grilling.
Remove from the grill. Garnish with chopped cilantro, lime wedges, and extra chili if desired.
Serve with jasmine rice or coconut rice, or over a fresh cucumber salad. Perfect for summer nights. 🌶️🥭🍗\
