Sticky Mango Chili Chicken Skewers Recipe🍗🥭🔥

Ingredients:

For the Marinade:

  • 2 large ripe mangoes, peeled and pureed

  • 3 tbsp soy sauce

  • 2 tbsp honey

  • 1 tbsp rice vinegar

  • 2 cloves garlic, minced

  • 1 tsp fresh ginger, grated

  • 1–2 tsp chili flakes (adjust to heat preference)

  • Juice of 1 lime

  • Salt to taste

For the Chicken:

  • 1.5 lbs boneless chicken thighs, cut into chunks

  • Wooden skewers (soaked in water for 30 minutes)

For Garnish:

  • Chopped cilantro

  • Lime wedges

  • Extra chili flakes or sliced red chili (optional)

Instructions:

  1. In a bowl, combine mango puree, soy sauce, honey, rice vinegar, garlic, ginger, chili flakes, lime juice, and a pinch of salt. Mix well.

  2. Add chicken chunks to the marinade. Cover and refrigerate for at least 2 hours (overnight is best).

  3. Thread marinated chicken onto soaked skewers. Reserve leftover marinade.

  4. Preheat grill or grill pan over medium-high heat.

  5. Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked and slightly charred.

  6. While grilling, simmer the leftover marinade in a small saucepan for 5–7 minutes until thickened.

  7. Brush thickened sauce over skewers during the last 2 minutes of grilling.

  8. Remove from the grill. Garnish with chopped cilantro, lime wedges, and extra chili if desired.

Serve with jasmine rice or coconut rice, or over a fresh cucumber salad. Perfect for summer nights. 🌶️🥭🍗\
